Health Benefits of Dehydrated Foods
Living foods are uncooked foods. They are easy to digest, rich in vitamins, minerals, and enzymes, and are highly nutritious. They include sprouted grains and beans, vegetables, fruits, nuts, seeds, fermented preparations, dehydrated snacks, and delicious deserts.
Dehydrating food dates back to Biblical times when it was a necessity. Modern methods of preserving foods through refrigeration, freezing, canning, pasteurizing, and chemical additives have almost made this ancient practice extinct until recently, when dehydrating food is now enjoying a much-deserved renaissance.
If stored properly, dehydrated foods have a longer shelf life than any other preservation methods. When sealed properly and left unopened, dehydrated foods can sit on your shelf for up to 20 years making them excellent for disasters and hard times.
Choosing a Dehydrator
A dehydrator is a small electric appliance that uses low temperatures and a fan to dry food. It essentially removes the water from the food, but it keeps the vitamins and enzymes of your raw food intact. (These are lost when a food is heated to higher temperatures—usually above
1180 F.) For this reason, dehydrated foods included in the raw food category.

Dehydrated Recipes
Dehydrated foods are a great addition to other raw food dishes. Dehydrated crackers make a great gluten-free treat. Most of the dehydrated foods can replace the textures and tastes of some popular (and very addictive) foods like bread, cookies, and chips. Who wouldn’t want that? Try my Kale Chips and Corn Crackers and see what you think.
Kale Chip
1 bunch kale
3 tbsp. extra virgin olive oil
2 tsp. garlic, minced
1/2 tsp. sea salt
juice of half a lemon
pinch of cayenne pepper
Wash the kale and then cut it into 3-inch long strips. (Chips will get smaller as they dehydrate.) In a large bowl, stir together the olive oil, sea salt, minced garlic, lemon juice, and cayenne. Add the kale strips one at a time and massage the ingredients into the kale.
Place your marinated kale on dehydrator trays and dehydrated for about 7 to 8 hours at 115-1180 F. These chips are so delicious. I’ll bet you won’t have any left to store.
Corn Crackers
1/2 cup golden flax seeds soaked in 2 cups purified water overnight
1/2 cup almonds soaked in 1 cup purified water overnight
2 cups fresh corn cut from the cob
3 tbsp chopped onion
1 tsp cumin
2 tsp sea salt
Blend all ingredients well in a food processor. Spread in rounds on a dehydrator sheet and dehydrate about 24 hours or until crisp. Flip the crackers after about 8-12 hours.
